Ingredients

Main Ingredients
  • 1/2 cup old-fashioned rolled oats
  • 1/2 cup milk (dairy or your favorite plant-based milk)
  • 1/4 cup plain Greek yogurt
  • 1 tablespoon creamy peanut butter
  • 1 tablespoon chia seeds
  • 1 teaspoon honey or maple syrup (optional)
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
Optional Toppings
  • Sliced banana
  • Chopped peanuts
  • Mini chocolate chips
  • Fresh berries
  • Cinnamon
  • Drizzle of peanut butter
  • Hemp hearts

Method

  1. Add the rolled oats, milk, Greek yogurt, peanut butter, chia seeds, honey, vanilla extract, and salt to a mason jar or airtight container.
  2. Stir everything together until the peanut butter is fully incorporated and no dry oats remain. If needed, use a whisk to help blend the peanut butter into the mixture.
  3. Cover the container and refrigerate for at least 4 hours, though overnight is best. During this time, the oats and chia seeds absorb the liquid, creating a thick and creamy texture.
  4. In the morning, stir the oats well. If they're thicker than you'd like, add a splash of milk until you reach your desired consistency.
  5. Top with sliced bananas, chopped peanuts, an extra drizzle of peanut butter, or any of your favorite toppings before serving.

Notes

Tips

  • Use old-fashioned rolled oats for the best texture. Instant oats can become too soft, while steel-cut oats stay too chewy.
  • Make several jars at once for easy breakfasts throughout the week.
  • For extra protein, stir in a scoop of vanilla protein powder with an additional tablespoon or two of milk.
  • If you like sweeter oats, add a little extra honey or top with fresh fruit.

Storage

Store peanut butter overnight oats in an airtight container in the refrigerator for up to 4 days, making them an excellent meal prep breakfast.
